Pinto Bean Soup

  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the sliced sausage, onion, and celery and saut� for about 5 minutes, stirring frequently.
  3. Add the bell pepper and continue cooking, stirring, for 3 or 4 minutes longer.
  4. Add the diced tomatoes, seasoning blend, salt and pepper, and chicken broth.
  5. Add the drained pinto beans.
  6. Bring to a boil; reduce heat, cover, and simmer for 15 minutes.
  7. Add the green onions and parsley and continue cooking for 2 minutes longer.
